Nigella Lawson’s Chocolate Banana Muffins


With all the excrement hitting the rotary oscillators these days, eating a balanced diet rich in fruits and vegetables has been challenging. I am quite sure I am not alone in discovering I had some very overripe bananas that simply had to be used up, so they would not be thrown out. Generally banana bread or banana muffins would be my go-to here, but those stalwart homey standbys were not going to hit the mark today. Leave it to Nigella Lawson to know just what to do: add chocolate.


These muffins are just the thing you need to bake right now, to satisfy your sweet tooth, your desire to avoid food waste, and your need to eat your feelings so you don’t do something insane. The recipe is in Nigella’s Kitchen, or here at her website. If you have never been to Nigella’s website, her recipes have a convenient toggle switch at the top, so you can use the measurement units you are comfortable with.

Now then, off you pop, make some of these tender, sweet, chocolatey, muffins of divine comfort, for yourself and those you love, and live to fight another day.
