My first attempt at a spiced bacon without a sugary glaze is not exactly a success, but not exactly a failure. It is bacon, after all, and I didn’t burn it, so there’s that.
I followed the basic instructions from the original recipe, except instead of sugar, I bloomed the spices in hot olive oil, then spread them over the bacon right before it was done cooking. The result is the spices are being overpowered by the bacon-y goodness.
We are still having BLT’s and soup for dinner, so no one’s crying over this experiment. No is shedding any tears over the fact that I have to try it again, either. So if you’re going to experiment with a new technique or ingredient, my advice is, do it with bacon.
